You have to admit – mushrooms are pretty provocative vegetables. Some tasty, some toxic. Some Illegal yet accidental. At times, avoided. At times, hunted. From Portobello, to shitake, enoki to truffles this mineral-full item has been shown to prevent the growth of cancer cells and protect cells from environmental carcinogens . But is this controversial cap even a vegetable? Well, technically, no. Mushrooms are fungi and members of the “Nightshade” family. They are rumored to be the only food to get its nutrients from the moon and is purported to have magically medicinal qualities. They’ve been using them for 3,000 years in Asia to boost immunity and fight diseases, while the Ancient Egyptians considered them worthy of only royalty.
So naturally, this tasty little meaty morsel is the perfect muse for Regal Vegan. This week we’ve got mushrooms coming out of our spores. A little Vietnamese flavor, a little Mediterranean, and naturally some Russian pizazz. Yeah. Pizazz.
