Ingredients
It is our express desire to use only the finest ingredients in the making of our Vegan fine foods. We believe food should be made with respect, and thus, we use no preservatives, no chemicals, and no animals.
Faux Gras contains: Lentils, onions, walnuts, organic miso, organic gluten-free tamari, mirin (Japanese rice wine), ume plum vinegar, extra virgin olive oil, sea salt, pepper.
GLOSSARY:
Mirin: Japanese rice cooking wine. We use the highest quality mirin, referred to as ‘Ajino-haha’ in Japan. Made only with Lundberg® Family Farm organic brown rice, rice koji (Aspergillus oryzae), pure water and sea salt. Naturally and traditionally fermented in cedar kegs.
Miso: We source misos called Long-Term that are made the traditional centuries-old way. They are aged naturally without temperature control for up to two years in giant four-ton cypress, redwood, or fir vats. Using only the finest certified organic ingredients like whole beans and grains, Blue Ridge mountain well water, hand-made organic koji, and sun-dried sea salt produces dark, rich miso that give a wonderful, rich flavor.
Tamari: A specially brewed, wheat free soy sauce made from organic soy beans. Traditionally aged in cedar casks for two years recreating the flavor and aroma of true tamari enjoyed for centuries in Japan. A robust seasoning and condiment. The best choice for longer cooking, commercial food production and for those with allergies to common wheat. Ume Plum Vinegar: This feisty, special vinegar is a by-product of making pickled Japanese Umeboshi plums. The plums are pickled with sea salt and shiso leaf, which produces a vinegar rich in organic enzymes, and complex in flavor.
